A distinctive product found in delicatessens of the North-East, especially in Trieste, where it’s known as cotto in osso (cooked ham on the bone). Made from legs that are not excessively large—making it easier to slice by hand at the counter. Also excellent served hot in a bread crust with mustard. Ideal for banquets and special occasions.

Our line of smoked cooked hams includes various High-Quality products. Smoking meat is a preservation method used since ancient times, adding a pleasant flavor. It was especially widespread in mountain regions or areas far from the sea, where salt—an essential preservative—was more difficult and costly to obtain. It’s no coincidence that smoked cooked ham is often referred to as Prague Ham, named after a landlocked city where salt procurement was likely quite challenging.
